Beef and Bean Burrito Recipe with Rice

Ingredients:

  • 1 pound lean ground beef
  • 1 can black beans, drained
  • 1 can diced tomatoes, with juice
  • 1 can diced green chiles
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 1/2 teaspoon oregano
  • Salt and pepper to taste
  • 2 cups cooked white rice
  • 8-10 large flour tortillas
  • Optional toppings: shredded cheese, salsa, guacamole, sour cream, etc.

Instructions:

In a large skillet over medium-high heat, cook ground beef until no longer pink. Drain fat if necessary. Add in beans, tomatoes, green chiles, chili powder, cumin, garlic powder, oregano, salt and pepper. Stir to combine and cook for an additional 5 minutes. Add cooked white rice and stir to combine. Cook for an additional 5 minutes.

Preheat oven to 350 degrees F. Spray a 9x13 inch baking dish with non-stick cooking spray.

Spoon about 1/2 cup of the beef and bean mixture down the center of each flour tortilla. Roll up the burrito and place seam side down in the baking dish. Repeat with remaining burritos. Bake for 15-20 minutes or until burritos are heated through.

Serve warm with your favorite toppings.
